Pizza Ovens: Built-In vs Countertop for Outdoor Kitchens
No outdoor appliance generates more consultation-room excitement than a pizza oven — and none has a wider gap between the fantasy and the follow-through. I've built magnificent wood-fired domes that anchor a family's entire weekend culture, and I've built them for clients who fired them exactly twice before the pizza stones started collecting leaves. The difference was never the oven. It was whether the oven matched how the household actually cooks. So before the "which oven" question, let's answer the honest ones.
The honest question first: will you use it?
A pizza oven earns its footprint if at least one of these is true: you already make pizza indoors most weeks; you entertain groups often (pizza is participatory theater — the oven becomes the party); or you'll treat it as a general high-heat oven — roasting vegetables, searing fish, baking bread — not a single-food appliance. That last point is the most underrated. A good oven holds heat for hours after the pizzas are done; our clients who love theirs most are roasting Sunday chickens in Tuscan-style embers, not just making margheritas. Countertop ovens: the honest entry point
The compact countertop category — gas or wood-pellet units in the $400–$2,500 range — has genuinely changed this market. They hit real Neapolitan temperatures (850–950°F), preheat in 15–20 minutes, and make excellent pizza with a short learning curve. In an outdoor kitchen context, their virtues are flexibility and honesty: you can try the pizza life for a modest sum, store the unit away for winter, and upgrade later without demolition.
Their limits: small mouths (most take one 12–13" pie at a time), thin thermal mass that recovers slowly between pizzas and can't do the long after-heat cooking, and — relevant to us as cabinetmakers — they are not zero-clearance appliances. A 900°F unit radiates seriously downward and sideways; it needs a stone or sintered counter zone (never wood, never quartz — see our countertop guide), clearance from anything meltable, and ideally a dedicated landing bay we design into the counter run with heat-tolerant surface and a nearby tool drawer. If you go this route, tell your kitchen designer before fabrication; a planned oven station looks built-in and works safely, while an oven plopped wherever there's room scorches counters and crowds the grill landing.
Built-in ovens: commitment, rewarded
True built-ins split into two families. Refractory dome ovens — the classic wood-fired form, site-built or delivered as a pre-cast core you enclose — are thermal-mass machines: an hour-plus of firing loads hundreds of pounds of refractory with heat, then the oven cooks pizza at 900°F, bread at 500°F as it falls, and slow roasts overnight. Nothing else on the patio does this, and nothing matches the ritual. The costs are equally real: 1,500–4,000 lbs of mass demanding an engineered base and usually a footing (recall the weight math from our construction comparison), $6,000–$25,000+ installed, a chimney with real clearances, and freeze-thaw detailing in cold climates — a cracked dome is a heartbreak we've repaired more than once.
Modular stainless built-in ovens — gas or dual-fuel units engineered to set into a cabinet run or masonry surround — are the pragmatic middle. They preheat in 20–30 minutes, hold a deck temperature without fire management, fit a designed cutout with an insulated enclosure exactly the way a built-in grill does, and cost $2,500–$8,000. This is what we specify most often in our aluminum kitchens: the manufacturer publishes cutout and clearance specs, we build the bay with heat shielding and ventilation to match, and the oven reads as architecture rather than appliance.
Wood vs gas: flavor theater vs Tuesday night
The eternal question, answered honestly: at 90-second Neapolitan bake times, wood contributes far less flavor than romance suggests — the pie simply isn't in there long enough to take much smoke. Where wood genuinely matters is the long game (breads, roasts, embers) and the experience, which is real and worth paying for if it's your experience. Gas wins Tuesday: push-button, consistent, no fuel logistics, no ash. Dual-fuel units are the have-it-both-ways answer. Placement: heat, smoke, and choreography
- Give the oven its own zone, out of the grill's landing area — two 800°F appliances sharing one prep counter is a burn ward scheduling conflict. A dedicated landing shelf beside the mouth (for peels, flour, and the just-launched pie) is the difference between grace and juggling.
- Mouth height: 42–48 inches to the deck for comfortable peel work — counter height plus base is usually right; dome ovens on low plinths are a back complaint in waiting.

- Clearances are the manufacturer's, not your mason's opinion — insulated enclosures, non-combustible surrounds, and the spec sheet taped inside the cabinet door.
The supporting cast: what makes an oven station work
The difference between an oven that gets used weekly and one that becomes yard sculpture is usually everything around the oven. Plan for: a marble, granite, or sintered stretch of counter for dough work — pizza is a flour sport, and the stretch-and-top station wants 30–36 inches of cool stone within arm's reach of the mouth; deep drawers for peels (they're 26–60 inches long — measure before assuming they'll fit anywhere), an infrared thermometer, turning tools, and cutters; dry storage for flour and wood; and refrigeration close by, because mozzarella and dough balls waiting in the house means a night of relay running. For wood ovens, add a dedicated ash bin and a rack's worth of dry splits within two steps.
